Fair enough @PaulLR3 but that's a Honda Passport....not a Land Rover Defender.
(nothing against the Passport, but it's not the re-make of a globally iconic off-roader)
I understand your frustration, @stl8grey. Since yours is an LR4, I don't know enough about that powerplant and components to give meaningful feedback. For the OP, since he never tried the MAF, it's still the best place to start and I hope that works for him.
@rs7trout did you ever actually replace the MAF Sensor?
Change it, clean your throttle body, verify that your thermostat is good ...and see what happens.
Almost certainly the swaybar bushings by your description. I'm surprised your dealer couldn't figure that out. I'd have them change those, and then maybe shop for a new mechanic (or dealership since you are under warranty).
The "transverse" part is the giveaway that it's the swaybar bushings...
Of course it's their go-to, on their course...but if the going got rougher than those mamby-pamby dirt tracks tailored to stock Rovers, they likely opt for something else.
Hmmm...did you put in an AMK or Hitachi? If AMK, did you replace the relay and do the software update?
Did you recalibrate the suspension? Or...can you check the calibration and note the values? See if any are out-of-wack...?
I'd keep both. There is no good reason to sell a well sorted LR3. Unless you are the only driver in your household and the two vehicles serve the same purpose.
While that Crawl Ratio is nice on the D5, the LR3 is already low enough...wheel travel then, may be the more important criterion. Hence, LR3 is victorious as the superior "Bench Wheeler." Plus it has a frame and looks way better!
